Banana Pumpkin Bread
I got this recipe from a friend and it is SUPER YUMMY!!!! I would of never thought that bananas and pumpkin would go together but it is really good!
Banana Pumpkin Bread:
3 c. Sugar
1/2 c. Oil
4 lg. Eggs
2 1/2 c. Mashed Bananas (very Ripe)
1 1/2 c. Solid Pumpkin (14 oz can)
2 tsp. Vanilla
3 1/2 c. Flour
2 tsp. Baking Soda
4 tsp. Baking Powder
1 tsp. Salt
1 c. Chopped walnuts or pecans
Steusel Topping (Optional - see below)
Directions: Preheat Oven to 350 degrees. Grease and Flour two 9x5 loaf pans. Mix sugar and oil in mixing bowl. beat in eggs, bananas, pumpkin, and vanilla. in separate bowl combine flour, baking soda, baking powder, salt, nuts (if desired). Build a "well" in the flour mixture - push flour mixture to sides of mixing bowl. Pour pumpkin/banana mixture into center of well, stirr with a spoon until moisted. Do not over mix-dough may look a little lumpy. Sprinkle struesel on top - or you may just prinkle nuts on top - or leave it plain. Bake in preheated over for 1 hour, or until toothpick inserted in center comes out clean. Check bread at 50 - 55 minutes, if turning dark golden, cover loosely with foil.
* Or makes 24 muffins. Bake 15 minutes at 400 degrees
Streusel Topping (Optional)
1/4 c. Packed Brown Sugar
3 Tbsp. Flour
2 Tbsp. Butter (not melted)
Directions: In small bowl, mix brown sugar and flour. With a fork or pastry blender, mix in butter until crumbly. Sprinkle on top of dough before baking.
**NOTE: Because I like chocolate soooo much. I added some chocolate chips into one of the loaves and did the streusel topping on the other one.

I am so excited that you posted this recipe! I was looking for yummy ways to use up some canned pumpkin I got on sale. Thanks for posting!
