Dessert Tuesday....change to Recipe Tuesday

I have bad a very bad blogger lately. I found out about a week ago that I had a sinus infection and have been down and out for a bit now. I am now starting to feel better.

I have decided to change my Dessert Tuesday to a Recipe Tuesday! I have this really good recipe for some roast beef sandwiches.

VERY Easy and VERY Good..... I give it * * * * * (5 stars)

Roast Beef Sandwiches, Au Jus

2 large roasts (I use the cheapest that I can find)
2 large onions, sliced thinly
1 large green pepper, sliced thinly (more if you really like green pepper)
4 Tablespoons butter
2 Tablespoons brown sugar
2 packages Lipton Beef and Mushroom Soup Mix (I have used Beef and Onion too)
If you want to add salt and pepper, that is up to you.

Place the two roasts in a roasting pan and bake at 200°. Do not add any water. I usually do this just before I go to bed and let it cook all night. In the morning take the roasts out. Drain the juice into a container and let cool until the fat comes to the top. Skim the fat. Let the roast cool until it is easy to handle. Take the fat off and break it up into bite size pieces (it should just fall apart). Place the meat into a large crockpot or if you don't have one, put it back in the roasting pan. Add the juice back into the meat.

Melt two Tablespoons butter in a large frying pan. Add the onion and cook until soft. Add the brown sugar and mix well. Add the onion to the beef.

Melt two more Tablespoons butter and add the green pepper. Cook until soft and add to the beef.

Add the Soup Mix, salt and pepper to the beef and mix. Add more water if it is not juicy enough. Slow cook until you are ready to eat.

We enjoy putting cheese on top: cheddar, provolone, or Swiss are good.

Oooh, sounds awesome! I will have to try it. I love any recipe that I can leave to cook by itself for awhile. :-)
